Vegan MoFo Day 8, still.
This is what I make when I feel lazy and don’t have ready-made pasta sauce in my cupboard. It takes about 15-20 minutes from start to finish and “bam!” you have something to eat. I guess I have a right to take every possible short cut every now and then. The recipe below is for 2.
1 pack (250gr) multigrain pasta with quinoa (penne)
1x tin chopped tomatoes
1 small onion, chopped or 2 tsp onion powder
Handful flat-leaf parsley
1 clove garlic, crushed (or if you’re feeling lazy, like me, use 1 tsp of garlic powder instead)
1 tbsp light olive oil
Salt and pepper
• Cook pasta according to packet instructions. Drain and rinse and drain again. At this point, you might like to add a little bit of vegan margarine to stop them from drying.
• Heat the oil in a saucepan and fry the onions with a pinch of salt until brown.
• Add the tin tomatoes, garlic or garlic powder and season with salt and pepper.
• Dress your penne with this easy tomato sauce and serve with chopped parsley on top.
