Herbie’s Cajun Spice Mix is probably the most used spice blend in my cupboard. I don’t use it in “Cajun Blackened” fish or chicken like it’s recommended on the pack by Mr Herbie himself but in vegetable roasts like my Cajun Spiced Kipfler Potatoes or Cajun Spiced Sweet Potato Chips.
Just like the whole range from Herbie’s, Cajun Spice Mix is also a high quality product. The blend has following herbs and spices in it: Paprika, Salt, Basil, Garlic, Onion, Black Pepper, Fennel Seed, Parsley, Cinnamon, Thyme, White Pepper, Cayenne.
Herbie’s Cajun Spice Mix comes in two sizes: 80gr and 45gr. I prefer the smaller pack (45gr) because it fits better in my spice jar. However, it is not a huge problem if it doesn’t as the packs are resealable.
Herbie’s spices are sold pretty much at every gourmet food shop. Alternatively, you could buy them Herbie’s Spices in Rozelle or their online shop.
Since Cajun Spiced Kipfler Potatoes has been one of my staple side dishes since I bought my ActiFry and recently replaced it because the old one was so overused, I thought I would repost the recipe here.
Cajun Spiced Kipfler Potatoes in ActiFry
500 gr Kipfler potatoes, washed, peeled and cut into small, even pieces (about an inch)
1 tsp Cajun spice mix (I used Herbie’s)
1 tbsp vegetable oil (I used light olive oil)
• Place the potatoes in ActiFry.
• ActiFry comes with its own measuring spoon and it sits on top the rotating part –as seen in the photo. That’s where I mix my spice mix and the oil.
• Mix the oil and spice mix together and drizzle over the Kipflers. Set the timer to 22 minutes. When it beeps your side dish will be nicely spiced and crispy around the edges. Enjoy!
